It’s officially spritz season. For those who haven’t yet been drawn to the orange allure of an Aperol spritz, the classic Italian aperitif is essentially the grown-up’s answer to orange soda. (Sure, that may be selling it short, but it does feel like an appropriate descriptor.) And though the cocktail tastes rather complex in its bitterness and effervescence, the Aperol spritz recipe is actually quite simple.

Though there are popular variations made with other aperitif, like Cappelletti or Campari for example, this particular cocktail is centered all around Aperol, which is conveniently sold in 750-milliliter bottles. To balance the bitter taste of the liqueur, the Aperol is combined with Prosecco and sparkling water. Ice and an orange slice are all that’s left to complete the summer cocktail.
