STRAWBERRY CHRISTMAS TREE

2 pineapples

Method

Trim all the skin off the pineapples. Stack them with skewers in between to hold them together. Cut the pineapples into the shape of a cone.

Keep some pineapple aside and make a little star to go on the top.

Remove the leaves from the strawberries. Add toothpicks to the pineapple and then push strawberries on top. Add mint leaves in between.

You can add any decorations you like to make the perfect Christmas tree.

CHOCOLATE PINECONES

Ingredients

Strawberries, green removed

Sliced almonds

250 grams of melted dark chocolate

Skewers

Optional – sprinkle with icing sugar to look like snow…

Method

Melt the chocolate.

Insert a skewer into the base of a strawberry. Dip the sliced almonds into the chocolate and stick onto the base of the strawberry making your way around until it resembles a pinecone. Once completed then dip the entire pine cone into the melted dark chocolate.

Serve on a bed of mint leaves.

CHRISTMAS TREE SALAD

Ingredients

Cos lettuces

1 capsicum

Teeny Tom tomatoes

Cheddar Cheesy stars

Method

Assemble the cos lettuce leaves horizontally to look like branches.

Sprinkle the tomatoes, if you cant find tiny tomato then you can dice capsicum.

Cut the cheddar into stars, otherwise little balls to resemble baubles. Place a cheddar cheese star at the top.

Serve with hummus or a dip of choice.

CHEESY HONEY BAKED PEARS

Ingredients

2 Fresh pears

4 cups of Rocket lettuce

4 tablespoons of Gorgonzola or blue cheese (or any cheese you like)

4 teaspoons of crushed Walnuts

4 sprinkles of Fresh thyme

4 tablespoons of Honey

Method

Pre heat the oven to 180 degrees.

Cut the pears in 1/2 lengthways and remove core making a cavity.

Put a tablespoon of the gorgonzola, then walnuts, then time and bake for 8 – 10 minutes.

Remove, place on the bed of rocket lettuce and drizzle with honey.
