Apple and miso crumble

Ingredients
- 8 Modi apples, peeled, cored & chopped
- 40g butter
- 1 tablespoon white shiro miso paste
- 1 teaspoons vanilla bean paste
- 1/3 cup brown sugar
- Crumble:
- 1 cup plain flour
- ½ cup brown sugar
- 1 teaspoons ground cinnamon
- Pinch sea salt
- 150g chilled butter, diced
- ¼ cup rolled oats
- ¼ cup macadamia nuts or any nuts, chopped
- Ice cream to serve
Method
- Pre heat the oven to 180 degrees C. Place the butter into a large pot and once melted add the miso paste and stir to combine. Add in the chopped apples, vanilla, sugar and ½ cup of water. Cover with a lid and simmer for 10 minutes, or until the apples are tender and the sauce has thickened.
- Meanwhile place the flour, sugar, cinnamon and salt into a mixing bowl. Using clean finger tips, add in the cold butter cubes and gently rub into the flour mixture until incorporated. Fold through the and nuts until the mixture has some large lumps of dough mixed through.
- Place the apple mixture into a baking dish then scatter over the crumble.
- Bake in the oven for 30 minutes, or until the crumble is golden and the apple mixture is starting to bubble up the outside of the dish. Serve with ice cream or yoghurt.
