Courtney Roulston’s delicious dish for Father’s Day – sticky BBQ pork ribs

Chef and Coles ambassador Courtney Roulston joined Nat and Shirvo (and the always-lurking Beretts!) in the Sunrise kitchen to make a meal perfect for Aussie dads this Father’s Day – BBQ pork ribs that are deliciously sticky, but not very tricky.

OVEN BAKED STICKY BBQ PORK RIBS

Cook time: 2 hours 20 minutes

Ingredients

2 large racks Coles Pork ribs (around 2-2.5kg)

BBQ Spice rub:

2 teaspoons garlic powder

2 teaspoons paprika

1 teaspoons onion powder

2 teaspoons dried oregano

½ teaspoons chilli powder

Sea salt and cracked black pepper

BBQ Sauce:

1 cup tomato ketchup

1/3 cup apple cider vinegar + 1/3 cup water

¼ cup brown sugar

2 teaspoons American mustard

1 tablespoons Worcestershire sauce

Method

Step 1. Pre heat the oven 160 degrees C. Combine the spice rub mixture in a bowl and rub all over the outside of the ribs so they have an even coating.

Step 2. Place the ribs onto a lined oven tray in a single layer then pour 1 cup of water into the bottom of the tray. Cover the ribs with baking paper then seal the tray with foil. Place into the oven and bake for 1 ½ hours, or until the meat is tender then uncover.

Turn the oven up to 180 degrees and place the ribs back in to bake for 15 minutes to crisp up the outside.

Step 3. Whisk the BBQ sauce ingredients together in a jug then slather the ribs with half the sauce on one side. Place the ribs into the oven for 5 minutes, or until the sauce is bubbling. Remove from the oven and cover with the remaining BBQ sauce and bake for a further 5 minutes, or until sticky.

Step 4. Cut the ribs into portions then serve with a simple coleslaw or salad on the side.
