The healthy way to lose weight (as a day on a plate)
Egg and zucchini fritters
Serves: one
Ingredients
1 zucchini, grated 2 eggs
1 teaspoon olive oil
Method
1⁄4 bunch parsley, chopped
sea salt and ground black pepper
Combine zucchini and eggs in a bowl. Shape into balls.
Heat olive oil in a frying pan and add balls. Flatten into fritters and cook on both sides.
Sprinkle with parsley, salt and pepper. Then serve.

30 grams of nuts
Lunch
Apple, Walnut, Fetta and Chicken Salad
Serves: one
Ingredients
3 handfuls mixed leafy greens (spinach, kale, rocket)
10 walnuts
1 celery stalk, chopped
1⁄3 red onion, finely chopped 30 grams fetta, crumbled
Method
1⁄2 cooked diced or shredded chicken breast, free-range or organic
1⁄2 red apple, chopped
1 teaspoon balsamic vinegar 1 teaspoon olive oil
Assemble all the ingredients except the balsamic and olive oil in a bowl.
Drizzle with balsamic and olive oil.
Mid-afternoon snack
Serve of fruit

Baked salmon fillet
served with steamed vegetables (1⁄2 cup broccoli, 1 carrot and 2 squash)
